1/2 c warm water (105°F to 115°F)
2 1/2 tsp active dry yeast
1 1/4c (or more) all purpose flour type 00
1 tsp honey or agave
3/4 tsp sea salt
3 tsp olive oil
In a large mixing bowl, combine flour and salt. Make a well in the centre. Set aside.
In a small glass-mixing bowl combine ½ cup warm water and agave, then gently stir in yeast. Let stand until yeast dissolves, about 5 minutes.
Pour yeast mixture into flour well and slowly combine flour with yeast mixture until combined. If mixture is sticky gradually add more flour by the spoonful.
Then knead mixture for 10 minutes or until dough is smooth and elastic.
Place kneaded dough in a large bowl brushed with olive oil. Cover with saran wrap and place bowl in a warm place and let dough rise for 1 hour or until it has doubled.
To make pizza, place dough ball on a heavily floured surface and use your fingers to stretch it, then your hands to shape it into rounds or squares. Top and bake.
