When the heat of early summer begins to pick up there is nothing better than the mouth watering texture of cabbage combined with the cooling zest of lime and the refreshing zing of cilantro. This fast and easy to prepare slaw is a staple at my outdoor table. I love it especially with blackened fish, chipotle, lime steak or shrimp tacos.
1/4 white cabbage julienned
1/4 purple cabbage julienned
1 c coarsely chopped fresh cilantro
2 tbsp olive oil
1 fresh lime squeezed
2 tbsp grated lime zest
1/4 tsp coarse sea salt
1/4 tsp ground white pepper
Whisk lime juice, lime zest, olive oil in large bowl.
Add cabbage tossing gently.
Mix in cilantro. Season with salt and pepper.
Let sit. This can be served at room temperature or served chilled.
Season slaw with more lime juice, salt, and pepper, if desired, just before serving.
