This is a delicious quick and easy meal. I will often double the amount and serve the leftovers as a cold plate the next day. The lemon and dill is particularly refreshing on a hot summer evening and the salmon can be grilled or baked depending on your preference

Baked Lemon & Dill Salmon
Serves 3-4

3 tbsp olive oil

2 tsp grated lemon zest

¼ tsp fleur de sel sea salt

2 tsp lemon pepper

4-6oz salmon fillets skin on

Lemon & Dill Drizzle

2 tbsp lemon juice

2 tsp grated lemon zest

2 tbsp finely chopped fresh dill


Lemon & Dill Sauce

In a medium bowl whisk together olive oil and lemon juice, add lemon pepper and grated lemon zest, mix until combined.

Add yogurt, then stir in freshly chopped dill. Mix well. Set aside.

Baked Lemon & Dill Salmon

Preheat convection oven to 400 F.

In a small bowl whisk together olive oil, lemon zest, sea salt and lemon pepper.

Place salmon fillets, skin side down in a large ovenproof baking dish. Pour oil and lemon mixture evenly over all fillets. Grind fresh lemon pepper on top.

Place dish in oven and bake for 10 – 15 minutes until fish is opaque and flakes easily with a fork.

When plating the fish drizzle salmon with lemon juice, then sprinkle with lemon zest and fresh dill.  Serve with Lemon & Dill Yogurt Sauce and Lemon & Dill Orzo on the side. This recipe is great served either hot or cold.
