This is a refreshingly simple salad. The lemon & dill combination is wonderful, combined with the creamy orzo texture. Serve this dish warm or cold.
Lemon & Dill Orzo
3 tbsp olive oil
2 tsp lemon juice
3 – 6 tsp grated lemon zest
1 tsp lemon pepper
½ c feta cheese
½ c finely chopped dill
½ c roasted pine nuts
1 tbsp olive oil
pinch fleur de sel sea salt
1 c orzo
In a medium bowl whisk together olive oil and lemon juice, add lemon pepper and grated lemon zest, mix until combined.
Add tomatoes, then stir in freshly chopped dill. Mix well. Set aside.
In a frying pan lightly roast pine nuts until golden. Set aside.
Bring a large pot of boiling water to boil, add olive oil and sea salt. Cook orzo until al dente. Drain. Set aside.
Toss orzo with tomato and lemon mixture. Add feta combine gently. Then lightly toss in pine nuts. This recipe can be served warm or chilled.
