Ingredients

8 Boneless Chicken Thighs

½ C White Flour

¼ Tsp Paprika

Ground Black Pepper

½ Tsp Fresh Thyme

¼ Tsp Sea Salt

¼ C Pancetta. ¼” Dice.

3 Tbsp Butter

3 Tbsp Olive Oil

6 Cloves Garlic, minced

Pinch Red Chili Flakes

1 L Chicken Broth

¾ C Heavy Cream

¼ C Fresh Lemon Juice

1 Tsp Sweet Paprika

1 Tsp Smoked Paprika

½ Tsp Saffron Threads

¼ C Parmesan

1 Tsp Freshly Ground White Pepper

2 Tsp Fresh Thyme

2- 3 Tbsp Tomato Paste

Zest From 1 Lemon

Ground Sea Salt to Taste

Directions

Pre-heat a convection oven to 350F.

Wash and pat dry chicken thighs.

In a bowl combine flour, paprika, white pepper and sea salt. Dredge chicken in mixture till lightly coated.

In a large skillet, melt 2 Tbsp butter, 2 Tbsp Olive Oil. Add pancetta and fry till pancetta is lightly browned. Remove pancetta and set aside.

Fold Chicken thighs in half and pin together with two wooden toothpicks. Place chicken in skillet and brown each side for 2-3 minutes. Remove from pan and set aside.

Add 1 Tbsp butter and 1 Tbsp olive oil to skillet. Melt. Add chopped garlic and a pinch of red chilli peppers and fry till garlic is lightly golden. Add 1/8 cup chicken broth and deglaze the pan, then add remaining chicken broth, lemon juice, saffron, paprika, thyme and freshly ground pepper. Saute on medium high and reduce liquid for 10 minutes or until it is ¾ the original volume. Add heavy cream, tomato paste and parmesan. Saute gently on medium low until mixture has lightly thickened.

Place the cream mixture in a cast iron skillet. Add pancetta and chicken thighs. Place in oven and roast until completely cooked, 25 -30 minutes. Internal temp should read 175F. Serve with wild rice, pan fried zucchini or lemon orzo.
