Za’atar is a staple at my table during the winter months. I sprinkle it on virtually everything from squash to popcorn. My favourite use of Pita Bread, when it is no longer fresh, is to make Za’atar Pita Chips. The crunchy chip combined with the tangy, astringent, lemony sumac goodness makes a wonderful treat. Make a batch and enjoy!
Za’atar Spice Mixture
3-4 Tbsp Fresh Thyme Hand Dried
2 Tbsp Sumac
2 Tbsp Toasted Sesame Seeds
1/2 Tsp Ground Sea Salt
2 – 12” Pitas
3-4 Tbsp Organic Extra Virgin Olive Oil
Heat a Convection oven to 375F.
Place Thyme in a mortar and finely grind with a pestle. Remove any sticks and set aside in another bowl.
Add Sumac to the mortar grind with pestle. Add Sea Salt and grind to a fine powder. Add Thyme back in and grind briefly
Mix in Sesame Seeds.
Next Slice and 1/4 Pita Bread into wedges. Brush both sides of Pita with Organic Virgin Olive Oil.
Line a pizza a pan with parchment and reassemble Pita into a circle. Sprinkle each wedge with the Za’atar Mixture.
Bake Pita wedges for 5 minutes or until golden brown. Watch closely.
Let Pita Chips cool on a rack. Store in an air tight container lined with parchment paper.
Store leftover Za’atar in a sealed container.
