This is a refreshingly simple and very rewarding week night meal. I love the flavour of fresh tarragon but the herb can be easily substituted with either basil, thyme or sage. The ground cherries, when baked, impart a complex sweetness to this savoury dish.

This is a keeper! The fresh tarragon, leek and wine really made this so flavourful. I didn’t have ground cherries and I used carrot instead of tomatoes. I prob used more like 1/2 cup of wine with the oil. It was such a treat for our friday night easy supper. Will definitely be a part of my dinner recipe collection. Thanks!
